You hafta use a pressure canner for low acid foods.

I do not believe that a hot water bath will be hot enough to sterilize the beans. A pressure cooker raises the temperature high enough to kill bacteria.

You can do a hot water bath.. that's the way I remember my grandmother doing them before we got the pressure cooker, but it seemed like it took forever. I can't remember enough about it to help you out with times or how to's though.

If you cook them before putting them in the jars, you can do just a hot water bath to seal the jars. Otherwise, you'll want to use the pressure cooker to cook them while you seal them.

Oh gees.........You would have to open cook the jars of beans for 2 and a half hours...but heres the best I have come up with..........Wash beans and pack the quart jars do not add water to the beans.......Place hot sterlized lids on and place in a 250 degree oven for 2 and a half hours,,,,,very good as they are like vaccum packed,really works.....

Contact your Extension Service. They have "homemakers" tho the name has been changed ...they have the info for you area. Generally you water bath those items that are acidic like tomatoes or pickled something or highly sugared like peaches. The rest gets pressured to kill botulism.
