Does a AAA player who gets called up for one game receive a salary bonus? and conversely, does a Major Leaguer who gets sent down for a non rehab stint get a salary cut?

No. A player is under contract for a set salary, regardless of what level he's playing at. The only exception to this rule is a AAA (or other minor league) player who does not begin the season on the 40-man roster. In order to call him up to the big team, they have to place him on the 40-man. Anyone placed on the big league roster must make the a major-league minimum salary, so if the player starts the year on a contract smaller than the minimum salary his salary will increase when he's added. Most of the time, though, a player ready to make the jump to the big leagues is on a salary higher than the MLB minimum, so this is extremely rare.

Of course, hitters with Major League contracts have to consent to being sent down... The Orioles are facing problems with that with 3rd baseman Melvin Mora, who has been on the disable list with an injured foot/ankle and doesn't want to do a minor league rehab stint before he rejoins the big club.

It all depends on their contract, for the most part a MLB player keeps his salary when on the DL or going down for rehab. A minor league player coming up has to receive the MLB minimum, or he would continued to be paid his salary if he is above the minimum.
