The Eurostar train arrives at Paris Nord station,
and I'm sure there are hotels around there, but you may want to go down towards the center, where you can still get good deals. Look in Lonely Planet and Let's Go France/Europe
guidebooks for listings of budget hotels.
There's one called Hotel Tiquetonne that's well located, not far from Paris Nord, and reasonable, but it's a real hotel, not a hostel. If you really have to go cheap, you should look for hostels.

The Eurostar train arrives at Gare du Nord in Paris.
It's a bit seedy round there, but the hotel below is nice.
Best Western Hotel Paris-Est
4 RUE DU 8 MAI 1945, COUR D'HONNEUR DE LA GARE DE L'EST, Paris, FR-75010, FR
Phone: 33 1 44 89 27 00 Fax: 33 1 44 89 27 49
Located in the Gare de L'est Honour courtyard, just steps from the Gare du Nord.

The eurotunnel doesn't "arrive" in Paris, it's a tunnel under the Channel (english and french coast).
If you mean the train Eurostar, it arrives at Paris north station. It's not the best part of Paris to find nice hotels but I have a friend working at the Comfort Inn right next to the station, and it's cheap, tidy and has a friendly staff.
