Lahaina is definitely the most "happening" city on Maui. The resort area that more people stay at when they come to Lahaina is Ka'anapali (pronounced kah-UH-nah-puh-lee.) That's where are the hotels are. There is also Honokowai (hoe-no-ko-why) and Kahana (ka-hah-nah) but these two areas have nice little condos, if that's what you're looking for.
Ka'anapali Beach is beautiful. It's about a mile long with real nice water. At one end of the beach, you can go water skiing. At the other end of the beach is something called black rock. It's a little cliff, maybe about 30 ft high that people love to jump off of for fun. Really beautiful. In between, you can find boats that will take you sailing, parasailing, snorkeling, and even a surf school.
Old Lahaina Lu'au is the best lu'au on the island. They'll feed you traditional food, but it's not soooo traditional that you'll be grossed out by it. Some fish and chicken and roasted pork. They have stuff for the kids too, like macaroni and cheese among other things. Plus the show is amazing.
The main street downtown is Front Street. There's a ton of restaraunts and stores there to pick up souvenirs and whatever else you could possibly when you come to Hawaii.
Restaraunts. Well everyone loves to eat at Kimos, Leilani's, or Hula Grill. They are all really owned by the same company. Leilani's and Hula Grill are in Ka'anapali and are usually a louder kind of environment and Kimo's is on Front Street. If you can only pick one, I would pick Kimo's.
I'm not sure what you mean by nightlife. We're not known for having the club scene but there are a couple. On Saturday nights, a restaraunt/bar call EO Trading Company at the Lahaina Cannery Mall is like a club. There's also a club called Spatz, it's in one of the hotels. The Hyatt Regency Maui is the hotel that it is at I believe. The Hard Rock cafe on Monday nights I think. And Moose McGuillicuddy's on Tuesdays. "Mooses," as people call it, is right across from Kimo's on Front Street.
There's tons of stuff for tourist to do! Your hotel concierge will be more than happy to point you in the right direction, I'm sure. All of this stuff is Lahaina. I reread everything and don't get confused. Ka'anapali, Honokowai, Kahana.... all of these places are a part of Lahaina. (And the zip code for Lahaina is 96761.) =)

Lahina is the most happening for a tourist spot, no beaches in Lahina though. There are good beaches in Kanapali (sp?) which is just a short distance from Lahina.
