Scientists are constantly trying to find explanations for natural phenomena
To explain the various happenings in the world and interaction between the things on earth, they needed to know what they are made up of.....just like you can predict how a curry will taste based on the ingredients that make it, we can predict the behavior of matter on the basis of what they are made up of
hence the Atomic Theory came, which explained what matter is ultimately made up of - atoms
Over the years scientists have discovered various particles that are smaller than the atom itself and actually combine to form an atom, all this has helped us to understand the world better and to predict the outcome of various processes with accuracy
It is because of the atomic theory that you are reading this, because if we never knew that electrons are there, we would not be able to predict their behavior and so there would be no TV and Computers which are completely based on the behavior of electrons
Hope that answers your question

Just how and why Dalton came up with his atomic theory has been debated over the years, and the answer is still unclear. Possibilities that historians of science have discussed range from Dalton s investigation on the solubility of gases to his studies on the combination of the oxides of nitrogen. For the most recent addition to the literature on the subject, which suggests that Dalton was influenced by the ideas of Bryan and William Higgins, see "John Dalton and the London atomists: William and Bryan Higgins, William Austin, and new Daltonian doubts about the origin of the atomic theory," published in the December 2014 issue of Notes & Records of the Royal Society, by M. I. Grossman at http://rsnr.royalsocietypublishing.org/content/68/4/339. You can obtain a copy through a library, and I believe the article should be freely available at this website shortly after the New Year. For a blogpost on the topic, see "New Evidence Suggests Origin of John Dalton’s Atomic Theory May Be Linked to Work of Irish Chemist Bryan Higgins," at http://meteoritemanuscripts.blogspot.com/2014_11_01_archive.html.

Robert Boyle (1627-1691), ‘The Father of Chemistry’, was the most influential scientist ever born in Ireland. There also is Antoine Lavoisier "father of modern chemistry" 19th Century Both were very influential in their field in their times considering 17th vs 19th Century during those years massive discoveries were made, and of course in the 20th into the 21st centuries more scientific discoveries are being made, but your question was who is called Father of Chemistry, so Robert Boyle it is!

Why did Newton discover gravity ? Why did Columbus discover America ? Why did Edison invent the light bulb ?
People have an idea and they give it forth to the world. Its up to the world to honour them.
