That is no problem at all. A lot of people do this. Not too many people are able to go to Disney for each family members birthday, so one trip can cover them all. After all, just because you are celebrating your kids birthdays doesn't mean that it actually their birth day, you are just celebrating ;-)
Different restaurants will offer different things, so if you don't plan to note it at all of them, be sure to check which ones you like the best for the ones you will note it on. For kids your ages a lot of people will celebrate at each meal, just because it is so special for them. At character meals the characters are more likely to spend a little time, the table may be decorated, they may get a card, cupcake, etc. The pins are also a lot of fun for the kids as well.
One final thing, be sure to tell the resort that it is their birthday as well. They will usually put a little something special in the room.
Some people will put requests on everything they do that they will be celebrating a birthday, others will do it on one or two things, it is whatever you choose. But there is no need to worry that you won't be in Disney for your childrens birthday, they don't ask for proof or anything.

You can celebrate your child's birthday whenever (and not on their real birthday) at any of the Disney parks and hotels. Be sure to have them wear their birthday pins, because some of the character meals do something really special for birthdays. (For instance, 1900 Park Fare (a buffet-style character meal with the cast of Cinderella, Prince Charming, Fairy Godmother, and the mice) gives the birthday child a cupcake with Mickey sprinkles, special place mats signed by the Disney characters, and a crown that reads "Happy Birthday".)
If you're staying at a Disney resort, let the resort know that it's your child's birthday, and they will send a birthday card signed by a Disney character (typically Mickey or Minnie Mouse).

A great place to celebrate birthdays is Chef Mickey's. They celebrate birthdays all day, every day. Stop by City Hall, in the Magic Kingdom and ask for birthday pins.
We have celebrated on around my son's and nephew's birthdays. It has always been a magical event.

just tell them you are celebrating their birthdays and they will go all out, they don't ask for proof. we have celebrated several birthdays that were not on the actual birthday, they bring special cupcakes at the restaurants and will sing to them also.

I dont think it'll matter.
I highly doubt if they're going to ask for your child's birth certificate.
so go ahead and celebrate their birthdays even though it's not on the actually day.
As long as they're getting the party that they want it shouldn't matter.

you can celebrate it...well you can celebrate it anytime you want, but you can't get the pin, a birthday call from mickey, balloons delivered to your room, or a cake unless you prove to disney that it is their exact real birthday. that means a birth certificate. i would start making a fake one if you want to celebrate their birthdays there. or just go to disney at a different time. have fun though!!
