I live in America and want to create shirts with a Canadian hockey team logo on them. But the copyright laws in Canada may be different than those of America's. How do I do this without breaking the law?

Ask their permission. In writing.

Under international treaty, the copyrights in Canada are also valid in the US. You need to get permission of the team. And they will want a licensing fee in return.
