Spaghetti squash is a winter squash and is supposed to be eaten ripe and cooked, but if it gets picked before it is completely ripe, can it still be eaten if cooked?

It's not poisonous or anything, if that's what you mean. But it proabbly will not taste as good when green.

You can, but it's much better cooked. Just cut it in half, clean out the seeds, place in a shallow pan with about 2 inches of water and stick in the oven for about 45min at 350.
When it's done you can add butter and eat it as it is or you can use spaghetti sauce which is the way we eat it here.

Good to know - I have a spaghetti squash in my garden this year, and one of them is growing HUGE - yet still is very pale green with stripes. May have cross pollinated or something. Hope it makes it because of the vine borer worm gets in there, it kills the plant. Woodbine, NJ
