The show would always open with him sitting on this stool with a drink in his hand doing a monologue. The rest of the half hour show featured comedy skits very similar to the Benny Hill skits. I seem to remember that a lot of the skits featured priests and nuns. Does anyone know who this comedian was?

Yes it is Dave Allen. The show was called Dave Allen at Large. One of the first Brit-coms I ever watched and still love it today.
