As far as i know, the sentence "she knows about that" is right. But in the past sense, is "she didnt know about that" correct? and does it change from 'know' to 'knew' when 'never' is used?

Both are correct. If the auxiliary verb is in the past tense (didn't), the verb must be in the present (know), you cannot use two past tense at the same time. In the other sentence is also in the past tense but because you're not using an auxiliary verb then you have use the verb in the past tense.

"She did not (didn't) know about that" is correct.
"She never knew about that" is also correct.
The second sentence has a different meaning than the first.

Yes both are acceptable for past Tense

'She didn't know about that' leaves a possibility that she could know about it later. 'She never knew about that' finishes that possibility. Grammatically I think both are correct.
