There are several options open to you.
1. Arrange you own Funeral
2. Pick out your casket or ern
3. Ask not to be embalmed, takes a longer time for the body to decompose if embalmed.
4. Make sure you have a will and state in the will what you would like done to your body after you pass
5. Appoint someone you can trust as your executor of your estate who agrees to follow out your wishes to the t so to speak.
6. Give all this serious thought before actually implementing your decision and also advise the family as to your intent.
7. Make sure once you have decided that there will be no interference from family members to your estate and your wishes as to the effects of your remains.
Unfortunately we all need to do this maybe sooner than later.
Hope this helped you out.

I think you're talking about an autopsy...your words, "stripped open"...if, God for bid, you do have some debilitating disease and you're under a doctor's care, you will not have an autopsy...or if you're quite old and you die in your sleep, but if you're young or relatively young, you're not under a doctor's care, and you pass suddenly than the coroner has the jurisdiction to declare an autopsy be performed...also your next of kin may request one as well...example - if you have surgery and there's complications...an autopsy may give insight to the cause of death or it may not...speak to your loved ones and let them know how you feel...when you set up your will let your feelings be known in your will or living will...and then you need to trust those around you to follow your wishes and hope that they will

You can request that you not be embalmed. In the Jewish faith, embalming is not allowed so the funeral happens immediately.
You can also request to just be cremated.
Autopsies are not required in all deaths. My grandparents and great-grandparents are deceased and none of them was autopsied. Autopsies are required if foul play is suspected or if the reason for death is completely unknown. In some cases, written consent of the next of kin is required.
You either need to put this information into a will and/or living will (a document that specifies what you your wishes are if you are unable to make medical decisions for yourself).

live in a cave
or on a deserted island
don't go out much stay isolated with out any friends to check on you
Never have kids so they won't worry,
Make yourself a mean old man who everyone hates, so they stay away from you.
Die on a boat by yourself and float away forever
go out in the desert and live hidden there
just a few ideas that came to mind.
I do understand where your coming from. I don't want to be "viewed" either. Just make sure you have a written will stating your wishes. I don't know about just leaving you alone to rot, the options above would be suitable for that , but you can stop the funeral and whatnot.

On a serious note which might yield you interesting and helpful insights: Try to discover why you are so concerned/worried about "clean...see me dead" This is important.
As you intuit the "end" approaching----move to an amazingly remote "hermitage" far from the madding crowd, and let Nature take its course. :))

Write a will stating your wishes. Make sure people know where your will is and what your final wishes are.
