If you're not opposed to supplements other than herbs, I swear by Emergen-C drink mix packets. The vitamin C is in ascorbate form, supposedly more absorbable than citric acid, which is more commonly used in vitamin C supplements. The Tolerable Upper Intake Level for vitamin C is 2,000 mg, though I've taken twice that without side effects (I only go this high when I'm really miserably sick, though... wouldn't take that much on a regular basis). The Immune Defense variety of Emergen-C contains zinc ascorbates, which I've found to be especially helpful.

I want to emphasize that I am not a nutritionist, but I've had a lot of immune system challenges and have found this to work best for me.:)
