well nothing will be closed except restaurants. you are can still swim in your hotel, have a pinacolada, and enjoy the sun. Cafe and restaurants outside hotels will open after 5:30 PM. Malls will be open during the day and night.

Zain gave you a proper answer. Let me just add, that of course you can eat in your hotel during the day. Depending in which hotel you will stay, food be served to the room or you will eat in an extra dining room with windows closed by curtains.
Nothing is closed during the holy month of Ramadan, but working/opening hours will be changed. Please be aware that malls mostly be open all night and be packed. Restaurants normaly start serving Iftar bueffets after six o'clock and reservations should be made. I am quiet sure your hotel can provide you with all necessary information.
During the holy months of Ramadan you should be dressed even more moderate than other times. Also do not hold hands, kiss or smoke in public.
At the hotel and the hotel beach you can enjoy the beach and pools, but will not be served with any drinks or food during the day.

In Dubai the restaurants and cafes will remain closed till sunset during Ramadan. It will not affect the shopping malls and parks, will be eventful till midnight.

life starts publicly at sun set every where till sun rise
in hotels and resorts
eat what u like in your room during day time
beaches malls,every thing is normally opens, but no food/drinks served during day time
but during the day time u can buy any think except alkohlic drinks from shops. malls, stores, but eat it in home
