I'm also enrolled in (Electrical and) Computer engineering, and I can tell you for a fact that Civil and Mechanical engineering will not be declining in the future, but will actually be increasing in demand. They almost always will be. (Only chemical engineering will decline, but not by much.) It seems like you already have your goals in mind, you should avoid letting other people persuade you from following your dreams, even if it your father. As for Imagineering, it is a bit different than engineering, but that is not to say your skills as a computer engineer would not be used. The truest concept of the Disney Imagineers is to create a fun and entertaining experience for Disney guests, in any way possible. With that said, it is really up to your imagination what you can do in terms of creativity and such. That is what these employers are looking for. Anything you can make possible will help further the goals of the Disney Imagineers. You'll also come to learn (hopefully) in the next few years of school, that you may need to step outside of computer engineering to another discipline (be it mechanical or civil) to solve a particular problem. I would assume Disney would expect the same thing of you.

I like to make things. I have to imagine them first, but I put a lot more into engineering their outcome than in their conception.
