Basically, concessions are a way for the building's operator (sometimes the city or county, sometimes the team) to make money. It's a monopoly, since you have one seller of food and drink; you can't go to a competitor.

You'll be interested to know that the markup is about 33 percent for profit purposes. So if you buy a $3 drink, $1 is pure profit. Concessionaires do have extra expenses compared to the corner supermarket, since they have to guess the night's crowd, bring in materials, etc. But it's basically a money-grabbing scheme.

By the way, it's no different at the movies. The theatres pay a lot to the studios for the movies -- something like 90 percent of the take in the first week -- so the concession stand is their way to make money.
