If not, how can you tell he's just using you?

It's possible at this age difference, but there will be lots of things that the pair of you will not see eye to eye on. Some of the things that may be different include likes in music, social things, friends, and maturity levels etc... But it's not like your 22 and 13 or anything and as adults should be able to tell if each is being genuine or not. Best of luck in finding your answer.

I know plenty of 30 year old men who are emotionally 18-year olds. They would likely be very interested in a 21-year old.
It could be that his emotional age doesn't equal his chronological age. If you think he's using you, I suspect you have a notion already. Consider it: do you pay for everything or most things? Do you have sex often? Do you buy him many gifts and/or evenings out? Those might be signs he's using you.
Maybe you are simply a very mature 21 year old. In that case, you might be exactly what he's looking for.

I am 32 and if I were not married I could be interested in someone younger if they were at the same maturity level as me. Age is nothing but a number when two people love each other.

It depends. Some people have a limit when it comes to age. Some don't. As far as I'm concerned I do have an age range. Don't want to be the hand that rocks the cradle...hehe. How to tell if he's using you. You need to be more specific in that area. Need more details.
