Shoo Fly Pie (so called because when you put it out to cool, you gotta keep the flies off it, it is so sweet)
Standard one-crust pie shell
1 1/2 cup flour
1 cup brown sugar
1/4 cup shortening (Crisco or whatever)
1 teas. PA Dutch spice blend (see previous Q)
Mix them together in a large bowl, using a fork, until you've got nice fluffy crumbs. Set that aside.
3/4 teas. baking soda
1/4 teas. salt
3/4 cup dark Karo syrup
3/4 cup hot water
Blend these ingredients together in a smaller bowl. Pour the liquid into the pie crust, then pour all the crumbs but DON'T STIR THEM UP! The idea is to make layers with the sticky bottom, the part where the crumbs got moist turns into something like crumb cake, and the top is loose crumbs. Bake at 450 F for 15 minutes, then reduce the heat to 350 F for about 20 more minutes. When it's done, it won't "jiggle" like liquid when you pull out the oven shelf.
If you're really decadent, serve it with vanilla ice cream.
--------------------------------------------------
Apple Pandowdy
2 or 3 Granny Smith apples
1/2 cup dark Karo syrup
1 teas. PA Dutch spice blend (see previous Q)
2 Tablespoons butter
Biscuit Dough (I use Pillsbury pop-can type)
Grease a baking dish well. A 8" or 9" square or whatever seems appropriate. Peel the apples, core them, and cut them into narrow wedges (maybe 1/16 of apple or even narrower). Arrange the slices in a solid layer on the bottom of the pan, overlapping the wide end on the narrow end of its neighbor. They shrink when they cook. Use a shaker bottle or strainer to sprinkle the spice blend over the apples. Drizzle the syrup over that. Distribute little pea-size bits of butter over that. Shape the biscuit dough to fit the pan and cover the apples. Bake at 375 F for about 30 minutes. As soon as you take it out of the oven, put a serving dish on top and invert the pan. Wait until it's stabilized to serve it, but if it gets cold, warm it up again when you serve. You can also make this one more decadent by serving it with vanilla ice cream.
Now you know why the Pennsylvania Dutch are so fat!

Okay but this is something I never do.
If you're Canadian, this is a really special shot for your Canada Day celebrations. If not and you like Chocolate and cherry, it's a nice three layered drink.
BOTTOM LAYER: Grenadine
with the reverse end of a spoon, slowly pour the reamaining two layers of alcohol over the spoon into the shot glass. Pour slowly and carefully enough for the alcohol to sit on top of the previous alcohol.
SECOND LAYER: Creme De Cacao
THIRD LAYER: Passion Fruit Alize.
If done right, it turns out to be a red, white, red layered shot. Great for Canada Day if you are Canadian or great if you like chocolate cherries. I used introduced this last Canada Day and made a killing.

Take some clean fresh water, about 1 1/2 cup. Pour it into the ice tray. Place it in the freezer, put it on maximum chill, wait for an hour. Wow the ice cubes are ready.
Serve them with scotch, rum, gin, vodka or simply water again.. everything will be nice on the rocks.
This is how you make crispy rocky ice cubes, and the best part there are no chances of the recipie going wrong and no difference in taste.

Hello Moon..
Here's the dessert.
Light Luscious Lemon
3 eggs - separated.
1/2 cup castor sugar
1 cup milk
1 tablespoon self-raising flour
1/2 cup lemon juice
method:
1. Add sugar to egg yolk, beat until thick and creamy. Mix in milk gradually on low speed, then sifted flour and lemon juice.
2. Beat egg whites until soft peaks form. Fold into egg yolk mixture in 2 batches using a plastic spatula - do not stir or beat or you'll deflate the mixture. Mixture will look a bit curdled.
3. Pour mixture in an oven proof dish (4 cup capacity). Stand it in a baking dish. Fill in baking dish with water half way up side the ovenproof dish. Bake in moderate oven until firm to touch (45 minutes). To serve, sprinkle with sifted icing sugar if desired.
Enjoy it with the loved ones...
Take care..

Well, you didn't want to hear my Ginger & Gilligan's Island joke, so ....... Olive Oil, Balsamic Vinegar (don't be shy), heaping tsp of Dijon mustard, few squirts of Magi (an asian seasoning like soya, but not), stir away very well (comes out brownish & a bit thick) & you have an amazing salad dressing. No lie
