No, theres no need to go over it twice. Besides you don't want the carpet soaking wet, it would take forever to dry and could cause mold and mildew....:)

if you have a machine where you put the shampoo in the fresh water tank, then yes you should normally rinse the carpet. The reason for this is, the shampoo attracts and holds dirt, if the shampoo is mixed with the water you use to wash the carpet there is still shampoo left in your carpet when you're done. Shampoo that is now attracting and holding dirt in your carpet. it will get dirtier faster.
One thing you have to watch out for though with this type of cleaning is over-wetting the carpet. this can cause all kinds of problem. Eg mold and mildew. If you do rinse the carpet spend more time vacuuming it dry.

The recommended way to clean your carpets is to pre spray the carpet. mix the shampoo with some water and spray it on your carpet, then use your shampooer with just water to clean.

It depends on what shampoo you use. Some manufacturers state to rinse and some don't. The majority of them don't suggest rinsing, but vaccuming after the carpet it dry.

I think they are arguing because after a carpet is shampooed, they can sometimes feel "crunchy" underfoot. That is dried residue that was not fully picked up by the cleaner. Usually happens most often after professional cleaning. Just vaccum and it no longer be crunchy.

No, the steam cleaner pulls everything out of the carpet if you have gone over the area properly. I also use my water only spray if I've gotten too much soap down.
