As I read all the interpretations of different parts of my natal chart I'm beginning to see a pattern of definite contradictions. Am I quick witted or slow? Is my head in the clouds or am I ultra serious? how the heck do I figure this out?
Do I just pick the description I like and go with it?

If you are looking for consistency, astrology is not the place to look. Thirty different astrologers will give you thirty different readings. Does anyone knows your own personality better than you? What can be told about you that was not known before?
Best to be your own person and take control rather than a book or a website telling you. Make and stand by your own choices. The past has happened, the future is unknowable, so live for the now.

Congratulations, you have found what is the ultimate disproof of astrology. It's lack of consistency and contradictions. Now think about how astrology is a fate of birth discrimination, akin to racism and sexism. No one chooses when to be born and there is no evidence for the stereotyping astrology must make. Certainly it can't predict the future with accuracy. No. First of all, text books and internet sites are a great help, but you shouldn't take them word for word. Most of them only touch certain aspects and signs and don't offer you an insight to the combination of all of them in the chart.
Fact is, people can be contradictions themselves. Like myself personally; I need my freedom and solitude and would do anything in my power to keep it. However, I can not bare to be on my own, or live on my own. Sounds like a contradiction, doesn't it? Sadly enough it's true and has driven many of my exes mad with frustration.
Another contradiction; I'm a realistic and analytical person who only believes when she sees. Yet I've been an astrologer since the age of 14. Might sound like a contradiction to people who don't know enough about astrology...

The contradictions are there so you can pick the answer you like and disregard the rest. Remember astrology is entertainment not a key to the secrets of the universe.

If you get a professional astrology reading from an actual astrologer instead of a book or online software, they will examine your chart and weigh which tendencies will be stronger, weaker or whatever.
And some people can be one way at work and another way at home, one way by themselves and another way in a relationship...
People are complex...
