When your driving along and you see the surveyors on the side of the road using the tripod things... what do they do?

They are called theodolites and levels. The surveyors are using them to measure distances and levels.

sometimes they are there to measure things like mountains or other things that cannot be measured physically. They take the angle and how high it looks from two points, and then using trigonometry find the actual height of it.
