Let us assume that the average human spends 5 minutes per day defecating (sitting on the toilet and reading doesn't count). There are 1440 minutes in a day, so the fraction of time spend defecating is
5/1440 = 0.003472222.

There are currently about 6.6 billion people on Earth, so if we assume a random distribution of defecation times, the number who are defecating at any given moment is
6.6 billion * 0.003472222 = 23 million

There are about 23 million people defecating at any moment.
