Some do, yes. For example, the Libertarian Party uses a symbol with the Statue of Liberty being the main image. I don't think too many of them use animals for symbols as the Democrats and Republicans got those from Thomas Nast cartoon, and most current third parties were not around then.
While in the U.S. the symbols are mostly unofficial, in Canada the parties have official symbols and even official colours. They tend to be stylish letters that stand for the party name in the major parties, also the Marijuana Party of Canada uses an interesting icon. :-)

For example when Teddy Roosevelt didn't win his party's nomination and decided to run as an independant, his party was the "Bull Moose" party - apparently it came from the saying that Roosevelt was as mad as a bull moose. You're right though - we haven't seen that kind of thing for a while.
