OKAY, this is my secret in making Pork Sinigang.

If you got Fresh Pork from the wet market, you don't need to saute it.

But if your Pork is frozen or you bought it from a Supermarket then you need to saute it, this will bring out the real taste of the pork.

Thats the my secret, but not anymore.

I like to share ideas.

I'm not fun of using Sinigang Mix or Ajinomoto/Vetsin/MSG, its full of preservatives.

I only use salt and real Tamarind if available if not you can use Tomato.

No need to saute the pork. Better use tamarind fruit or flowers for natural seasoning and a dash of sugar instead of "vetsin", monosodium glutamate.
Hmmmmm, now I am hungry :)

my mom's way:
>saute first if you're using fresh camias.
>boil the pork right away with the sampalok pods

she doesn't like artificial mixes. she's old fashion.
but, she makes pork sinigang to die for.

That is the way it is done in our house. In fact, even bangus is sauteed first before boiling. Now I find sinigang that is not first sauteed as improperly cooked.

We are sinigang lovers. We even cook sinigang na lechon (yes, try it when you have leftovers from a party, instead of the usual paksiw na lechon), and the best is SINIGANG NA BAGNET. Aaaaaaahhh.

i use the sinigang mix and follow the directions...boil the pork first...wow! i just cooked that yesterday...

No. Boil the pork until tender, then add whatever you like.

I will defer the cooking to you, irogluv, coz I'm useless in the kitchen. I will however do the slicing (kihad-kihad).
