If you're in Ho Chi Minh City, go to the expat village in District 7. It's a new development designed for Western style living. You're going to feel like you're in downtown suburbia USA when you're there.
There's at least three pizza joints, a few sushi restaurants. A big Co-Op store that can pass for a Wal-Mart. The streets are wide and there are more cars per capita than the rest of HCMC. The amusement park should be open now. Oh, let's not forget the golf course. It's a lighted 9-hole course, so you can play golf into the night and beyond.
In Hanoi, the closest thing to an American-like place is probably West Lake or the new developments along and near the highway going to Noi Bai airport. These places are not as American-like as what you will see in HCMC, but it may suffice as a slice of home for you.

In Saigon there is a good disco in the Windsor Towers, my brother-in-law works there, drinks are about $5. Is that American enough lol.
Great American style food on Bu Dien St in the backpack area. Santo's Pizza makes a great club sandwitch.
Either of the two water parks are a lot of fun also.
If worse comes to worse, try the Consulate on Le Duan Street. It's filled to the ceiling with red tape and arcane requirements LOL

I can't see why you would be home sick for USA. We just came back for Vietnam and are ready to go back. I always seek out places where there are none or hardly any foreigners. More fun to be with the Vietnamese.
I can hardly wait to go back next summer for a month.

If you are in Saigon go to the roof top bar at the Rex hotel. or the Hideaway Restaurant. (it really is hidden away and hard to find) both offer western style food and appealing surroundings. If you are in Nha Trang go to the sailing club. If you are in Hoi An go to the Sleepy Gecko bar. Great American breakfast with crispy hash browns. If you are in Hanoi. forget it. Get on the plane. I personally would recommend the Hash Browns.

In Ho Chi Minh City there is a really nice place and they serve american food (yeah) and across from it is another place with american food like steakes and eggs.
