I am going away very soon and so my laptop will not be used for a while. The battery is a Lithium ion battery. How are these best left? Fully charged, empty or sort of in the middle?

You know, http://www.batteryuniversity.com/ really has some interesting information about batteries. Check there. I would just say unplug your laptop and just keep it the way it is. Or you can discharge it to about 40%. I think that's what that site says.

I always charge mine fully before not being on my laptop for a week or so and haven't had any problems

As long as the battery is not completely discharged, it really shouldn't matter. Just don't leave it on the charger for extended periods of time.
