I know it can be odd colors based on upset tummy or eating too much of one thing or another.

But under normal circumstances why is it a rainbow of brown shades? (I really wanna know)

Objects have colors because those are the colors of light that are reflected. When the human eye is stimulated with red light, and simultaneously stimulated with green light at about half the intensity of the red light, we perceive it as either brown or orange, depending on how bright the light is.

So, poo is brown because it absorbs blue light very well (reflecting almost none), absorbs some green light (reflecting the rest), and absorbs very little red light (reflecting the rest).

Feces are mostly shades of brown or yellow because they are also made up of an orange-yellow substance called bilirubin that is present throughout the body and particularly in the intestine. When iron combines with bilirubin, it gives it a brown color. The iron-influenced bilirubin then combines with the feces and turns it brown.

poo is brown because back when we were cavemen, (and sometimes now), we pooped on the ground. The ground is brown and the poo is too so we could drop a turd and watch our fellow caveman step in it. If our poop was saftey orange then no cave men would step in it and Oog no have chance to laugh.

As for the chemical process that causes food to turn brown inside the digestive system, the process is rather simple. When water mixes with air inside our digestive system, the walls of the intestine start to rust. It is the mixture of intestinal rust with the digested food that gives the poop the pleasant brown color and distinctive odor. I am told that it tastes alot like chicken too!

Haha, rusting intestines, very funny.

Apparently it is the disposal of blood and products of the gall bladder.
