the pumpkins one on each vine are basketball sized but do not seem to be growing. What should I do, i have tried burying the vines so the roots would get more nourishment. Is my son out of luck this year, help!

The leaves are needed for shade, to keep the weeds away. Anyway, you cut them, so you'll need to wait until more grow. Make sure the vines are well watered and grounded / nourished.

Yes a kitchen knife will work and if you wanna stem on the pumpkin cut 2-3 inches from the pumpkin, or you could twist it off at your own risk

a plant cannot grow without leaves... the leaves are the food producers that keep the plant in the energy it needs to make fruit and seeds.... if the part of the vine that you buried doesn't sprout new leaves, and soon, it's done for...............
