If you are only doing one day, then do one park. If you are staying a week, then a hopper becomes nice because you can go to another park if the one you are in gets too crowded. Also, if it rains and fireworks are canceled, you can catch them on another night after being at another park all day. You can fill an entire day at the Magic Kingdom and still not see everything. There is no reason to hop if you are only doing one park. It takes 45 min or more to get out of a park, get to your car and transfer to another park (or to transfer using Disney transportation). You only have to pay parking once a day (show your receipt at the parking gate of the next park).

It really just depends on each person and what they want to do. If you have a short time in the area, have never been, etc. I don't think that the park hopper is necessary. There is so much to see in the park that you could spend a whole trip in each park.
Hopping can take a good amount of time as well. Most people estimate around an hour to go between parks; to get out of the park, to the bus stop, wait on the bus, get to the next park, into the park, etc. it can take a good amount of time. If this is your first trip or something, you could see a lot more during the trip if you don't hop around a lot. Having younger kids it can be a little more difficult to get them to the buses and get them around and such. They also tend to get tired later in the day and just want to take a break. Most kids don't enjoy it if they are too sleepy, so it can cause them not to have as much fun
If you are planning to stop in the middle of the day, go back to the room, etc. then it may be a good idea. Since you have to take the bus back anyway, it really doesn't take any extra time and you can spend more time in the parks and things. . I think another nice reason to get hopping is so that you can go to a different restaurant to dine in. It gives you a lot more options than staying in one park.
I'm not sure if you are aware of this or not, but even if you don't get hopping you are able to go to all of the theme parks in Disney, you don't have to stay at Magic Kingdom. Whatever park you use your ticket at the first time for that day is the one you will need to stay at. You are able to come and go to that park, but you can't go to Animal Kingdom in the morning and EPCOT later in the day. The next day you can go to a completely different park, whatever you choose.
Finally, another good thing about the park hopper is that it does allow you to experience the other parks. If you plan to spend most time at Magic Kingdom, but still want to see the others, it gives you that option and you don't have to stay there. Maybe you want to go see EPCOT or have dinner there, but you get there and the kids aren't having a good time, without hopping you cannot switch parks. However, there still is a lot that you can do. You can always go to the pool, Downtown Disney, DisneyQuest, the waterparks, etc. so you do have more options.

It is a good idea. Every time my family has gone, it's been great to use because some parks close earlier than others, and also it's good to have options. Animal Kingdom is the one that closes earliest, I think at 7pm in the summer, but Epcot, Magic Kingdom, MGM are open later than that. It's good to be able to do half the day in one place and see all you want, and then be able to go somewhere else.

Save your money and just do the one park. We went for a week and spent 2 days at each park. I would say to skip MGM and Epcot altogether based on their ages. Animal Kingdom is like a gigantic zoo with some rides. If you can, allot 2 days for Magic Kingdom. Have fun!

HOP! If your children were babies I would say just MK but they are old enough to want to see more than the "kiddie" rides and attractions of the Magic Kingdom.

I would save your money and just go to one park per day. If you've never been before, you'll be suprised how tired you get before the end of the day. Plus, as long as you get your hand stamped you can go back to that same park that day.
