I recently bought a 2004 Ford Escape.
(I know absolutely nothing about cars lol)
Should I drive with the O/D on or off? when is it okay to drive with it on and when is it okay to drive with it off?

Over drive is a extra gear thats used on highways. All it does is lowers your RPMs ( Revolutions Per Minute ) and saves a few gas miles. When over drives is ON, the transmission will go in to over drive automatically. When its OFF, the transmission will not go in to over drive. so your engine works at a higher RMP speed. Over drive is very good for high speed traveling like highways. I turn mine on when i hit highways and leave it off on city streets ( high ways is 55 MPH plus ) and ( city is ushualy any speeds between 0 and 55 ) I gave you a link to take a look at. Scroll down when you get the site up, to Over Drive.

It is fine to drive with overdrive on all the time inless you are towing but that would not be recommended in an Escape as they don't have strong transmissions for that. It should automaticaly shift down on hills or if you push the gas down hard. You may take it off going down hills so that you vehicle will engine brake a bit and help keep you speed without riding the brakes.

This is your highway gear. The only time you need to turn it off is if you are on a slow, steady incline and the car keeps shifting back and forth between gears. Turning it off helps keep the car in a lower gear to help you climb the hill. It's handy if you live in the mountains or in a hilly area.

Leave the O/D on all the time. The car will automatically shift in and out of overdrive when it is needed.

If you ever have a situation that the car is shifting in and out of overdrive while going up a steep hill then you can turn it off until you get to the top of the hill. Then turn it back on. good luck.

It's up to you. In town, speeds under 45 M.P.H. you should drive with the O/D off. Speeds above 45 M.P.H. you should have the O/D on [anywhere the speed limit is above 45 MPH] In most cars the O/D doesn't enagage until 45 MPH or above. This is the cars with the automatic O/D.
I would just leave it on and it will shift in to O/D when necessary.

Keep it on.

It is what allows the automatic transmission to shift into the highest gear, which will save you the most fuel.

On, it saves you alot of gas! I wouldn't go on the highway with it off either. That'd really kill you mpg!
