Should switch off when u turn it down slowly, if not then it may be the stat has worn out or it could be that the whole unit has lost some gas in the system making an inbalance so it's freezing more in the fridge than in the freezer.
It may be worth finding a local fridge engineer who offer free call out to check these 2 things before you decide if it's worth repairing, other than that just defrost every few weeks.

in addition to the first answer, cover up the foods that are stored in the fridge, the moisture thats in the dishes is evaporating, and collecting on the coils in the back of the unit. when this mass of ice does start to melt, make sure that the drain tube at the bottom of the ttray is clean and running free so that that condensate can drain out of the refrig.

The more you open and close your fridge / freezer door, the more warm moist air from the kitchen area gets in and then cools to condensate and then ice crystal build up.

There is probably a separate control for the refrigerator section, and it's turned up. Check everywhere inside the fridge section.

you should have a small hole at the back of the fridge,at the bottom,make sure its not blocked and the temp isnt to cold on the fridge
