The color of hair depends on the biochemicals of it (as in pigments). Sunlight (especially UV) is penetrating and the solar photons are captured by the electrons orbiting atoms and molecules. The energy of the photons may be enough to change the chemistry of pigments altering the wavelengths of light that are absorbed and thus hair color. Although dark hair may be affected by sunlight the results are perhaps less noticeable compared to lighter hair.

The colour of both your hair and skin are controlled by pigments. Certain things from the sun can damage pigments and the more damaged your pigments are the larger the change in your hair colour.
