i have to answer a chemistry question on how soda water followed by a towel press will clean coffee out of carpet. i was hoping to find out the relative equations and principles behind the cleaning capabilities of soda water and whether it is the bubbles or the carbonic acid which does the cleaning.

You're quite right. The bubbles that form on contact with the carpet lift the dirt out, and the towel press absorbs not only the coffee but the soda water that's been used.

Blood: Immediately pour salt or cold soda water on the stain and soak in cold water before washing. For a more stubborn stain, mix cornstarch with either talcum powder or cornmeal in water and apply mixture. Allow to dry and brush away.
Fruit and Wine: Immediately pour salt or cold soda water on the stain and soak in milk before washing. In general, it is a good idea to keep some soda water in the fridge as a stain remover.

Baking Soda
Sprinkle a little baking soda on a wet dishcloth to quickly remove coffee and tea stains.
Either baking soda ( NaHCO3) or washing soda(Na2CO3) will worl better because of alkanality...
