I'll assume your talking about emergencies.
Bottled water, some candy or other dry food stuff. A first aid kit is not a bad idea either.
Naturally, all the tire equipment, the jack, good spare, and don't forget a tire pressure gauge. A lot of the time you go to a gas station and get air and the gauge is off. It is better to have your own. A flashlight and an Army blanket would also be nice ot have too.
That's alot of stuff to carry, but it may be worth it, if you need it.

i say everything to put on a spare, some emergency cash extremely well hidden just incase you're broke, jump start cables, a tire pressure guage and check that at least once a month, some engine oil, power steering fluid, washer fluid, transmission fluid, coolant, some change for the meter, and i keep papertowel just incase anything spills or anything, oh and a radar can get useful lol
