we just had some serious soul food tonight...my husband just got back so we fixed: Fried catfish, collard greens, baked mac & cheese, cornbread, homemade strawberry cheesecake, and ice peach tea. Boy oh boy...that was some good eating. but in essence soul food is really anything good made from the heart.

Black eyed peas, sweet potato pie, corn bread, ham hocks, dirty rice, prawns, po'boy sandwiches. The best food on earth, and easy to cook. Of course if I ate it all the time I'd weigh 300 lbs!

anything fried or that someone cooks without looking at a recipe or using a measuring cup (usually contains bacon grease) - it comes straight from the soul!!!! ;-)
my favs are fried okra, fried apple pies, homemade veggie soup with cornbread and my VERY FAVORITE - cornbread, milk, tomatoes with salt and pepper all in a glass mixed up...OMG, now I'm so hungry.
