At first I thought he was adjusting or something like that. But I've had him 5 days, not including the day I got him. I think I've seen him eat maybe 3 flakes.

He seems to swim near the top of the water sometimes and at other times near the bottom. Is that normal?

Can I use a candy thermometer to measure water temperature?

maybe it doesn't like the flakes. It could be the temperature.
Bettas swim where ever.

Drop by the store where you got him and ask what they feed the Bettas, then get that food. While you are there, also get some frozen blood worms. Very few Bettas will pass those up. As I recall candy thermometers measure high temperatures, beyond where I Betta can live. A floating aquarium thermometer is cheap, just put one up to be sure.

A lot of bettas won’t take flakes readily – they prefer betta pellets or bloodworms (freeze dried or frozen are usually accepted very well).

He’s probably just eating the flakes at a bare minimum because he’s very hungry.

He probably is fine! If he was hungry he should eat. Also is he going number 2? If he is it must mean he is eating something and maybe you wernt noticing it!
