You might check on this one, I really like the area(South LV) and these apartments are convenient to I-15

I thought these were the nicest that I looked at and the most reasonable.

Villanova Apartments
2815 W Ford Ave
LV NV

A 1br was $584 - I didn't look at a 2br

1br = 725sq ft

first of all, there are no nice areas to live around the strip for $750. in that price range you can find places almost anywhere in the valley. stay away from downtown. the fremont street area. there are some nice places there and it's currently being renovated but it's got a loooong way to go.
my advice is to figure out where your job is and try to find a place close to work. commuting is hell in the valley especially if you have to take the 95 for any reason. henderson, southwest, northwest/summerlin, and far northeast/sunrise mountain, and far west are all nice areas and reasonably priced. but it really depends on where you work. you don't want to get a place way up in summerlin, then have to commute 2 hours a day to a job in henderson.
