Greg Lake (of Emerson, Lake and Palmer) I believe in Father Christmas : Troika Ride from Prokoviev's Lt Kije Suite.

Elvis Presley: It's Now or Never (O Sole Mio...can't remember the composer, but it's from an opera).

These are only 2 I can remember. There are probably a good few more.

'Altogether Now' by The Farm was based upon Pachelbel's Canon.

'A Lover's Concerto', by the Toys was an adaptation of a minuet by J S Bach.

The old Perry Como song 'I'm Always Chasing Rainbows' was a reworking of Chopin's Fantaisie Impromptu in C# Minor.

'Nutrocker' by B Bumble and the Stingers was an arrangement of the Marche from Tchaikovsky's Nutcracker Suite.

The bit in the middle of 'All By Myself' is an extract from Piano Concerto No 2 in C minor, by Rachmaninov.

One of my all time classical tunes is Ravel's Bolero, and was very pleasantly suprised when my favourite contemporary artist Rufus Wainwright incorporated Bolero into his song "Oh What A World" to great effect. You should check that out. Its the first track from Rufus' "Want One" album.
