Sounds like I'm on the wrong side of the pond today, but I'll try to contribute, just the same.
The subtle difference would be that I've had 'chips' with about everything, however, I don't always have everything With chips.

I'm a Mackem and I very rarely have chips ... I don't like potatoes, I did have them on Friday .... I got a fish lot from the chippy round the corner from work but I piled the salt and vinegar on them.

well i am a proper southerner and i would say i have chips about once a week at most. i eat rice pasta and prefer fresh potatoes if i have any. i am not a health freak and do enjoy it when we have a few chips, i think you would enjoy them more if you ate them less.
