Not that I know of, but I gotta say, it's a brilliant idea and I'm surprised one hasn't been written. Considering the thousands of little sub-goals that had to be accomplished before the one big goal of landing men on the moon, it could be quite a game.
Can I steal your idea?

I don't really understand your question... The programs you are talking about ended long before Christa McAullife was named by NASA as the representative for the Teacher in Space Project. The Mercury-Redstone missions were America's first foray into manned spaceflight, occurring when McAullife was a child. Gemini followed Mercury, and were used to develop spaceflight further. The Apollo program was of course the one that got America to the Moon, and it ended in 1972 when McAullife was about 24. She wasn't selected for the Challenger mission until 1985, 13 years after Apollo ended. So, the answer is none of the above. Christa McAullife was a teacher who was selected to NASA's Teacher in Space program, which was an outreach. The Challenger was a part of America's current manned spaceflight program the Space Shuttle (using shuttle at the end of Mercury, Gemini, and Apollo is a misnomer as Shuttle has only ever been applied to the current program). So, in actuality the real answer is that Christa McAullife was in the NASA Space Shuttle's Teacher in Space Program. She was never a member of the astronaut corps.

I second the Orbiter post. It's a great freeware space simulator that is very realistic and has pretty nice graphics for a free game programmed by one guy. The base package has no sound, but there is a sound addon that makes it seem as if it was part of the game all along. It's called OrbiterSound, just search for it.
