Cows have four stomaches so they digest more completely the grass they eat, they also eat other things but their system is a whole lot different than a horse or deer, the horse does not eat its food 4 times so its body does not process the foods it eats down as far as a cow, it also eats things other than grass, a horse if it is domesticated generally eats a large amout of oats, corn, and other grains mixed, and alfalfa hay. Deer eat an even more diverse diet than horses they eat berries, bark, leaves, and several other types of flora. Deer also eat a lot less than horses due to the fact they are not generally raised as a domesticated animal. A deers system is again entirely different from a horse or cow. It also depends largely on the health of the animal how its dung looks. And except for size horse dung and deer droppings are quite simular they both make pellet shaped droppings. A horse being about 5 to 10 times heavier than a deer makes a big poop and the deer being smaller makes a smaller poop. The cow is an animal food processor (turns everything into paste), and the deer and horse are simular in a lot of ways so their remains are somewhat simular.

First of all they don't all prefer to eat the same "grass". Horses are very picky about which grasses or weeds they eat and deer like more woody vegetation.
The main difference is in how their digestive systems work. I don't know a whole lot about deer, but cows have several stomachs and re-chew their cud in between. Horses only have one stomach and do not chew cud. I am pretty sure deer chew cud.
If you feed your dog the same food as you eat, would you expect him to start making human poop?

they are different
they are made to eat the same thing but they operate in many different ways
and a easier way to track if it doesn't leave hoof prints
