With an automatic transmission, the trans will shift in and out of overdrive as it needs to in order to maintain the most efficient RPMS for the road and speed you are traveling. You will get better fuel mileage and your engine will last longer if you just let the transmission shift for itself.

The only time you really need to shift OUT of overdrive with an automatic trans is if you are towing a trailer or hauling a really heavy load.

If you have a manual transmission with overdrive, just consider Overdrive to be your top gear, and shift as normal.
