I have a lot of specialties but here is my best friends favorite.

It's Jumbo Shrimp with Mint and Basil'

3/4 cup of lightly packed washed and cleaned fresh mint leaves
1/2 a cup of lightly packed and washed clean fresh basil leaves
1/4 or 1/3 of a cup of lightly toasted pine nuts
1 or two cloves of garlic depending on the size
2-4 tablespoons of fresh grated Parmesan (put some to the size for those who wish for more)
Salt and pepper
2 pounds or 2 and 1/4 pounds of peeled deveined, uncooked shrimp and some olive oil

Put the mint and basil in the food processor adding the pine nuts and garlic until finely chopped then add some olive oil just enough to make a pesto, season with salt and pepper.

Cook shrimp in pan with olive oil remember to season, toss cooked shrimp with pesto and serve while hot with bruschetta
