You can. Most door bells run on a 24 v ac feed. You can put a switch in line somewhere and turn it on and off like a light switch. You can almost as easily just disconnect one of the 24 v wires and leave it disconnected when you want it off.

Most door bells have wires going from the door bell to a transformer to the door bell button. You can disconnect any wire from any one of those spots. Since the wiring from the doorbell button is 24v you can add a switch. It will not look good you can do it temporary.

You can undo one of the wires in the bell unit and it won't ring. It's low voltage so it won't hurt you. 12 volts. Just a simple screwdriver and you are done. You can also just stuff some paper towels in between the striker and the bell too. It still may click but won't be annoying.
