I want to make a dollhouse with my child. Should we paint it and then glue it together or glue it together and then paint it?

Mostly you build a dolls house the same order as a real house:
Frame, walls, floors, wiring, painting the walls and ceilings, floor coverings, painting the doors, wall paper, and you finish with the details like nails for pictures and adding lamps and so on.

But one advantage over real building is that no lives are depending on your work.
If you like to paint and wall paper before you place the wall, no body is going to stop you.
You just risk the glue showing.
(And in real building they pre-paint some components before installing, so that is the same too.)

Have fun with the dolls house, my mom and I still treasure the one she made for me.

Put it together first. Your child will get vastly impatient if you paint first. Check out 'miniatures/dollhouse' websites for interesting ideas on construction and finishing.
