I've had the same problem before too. When it happens, just manually change the capital to an undercase letter. Word will underline the word in green. Right click on the word, select Grammar, and choose "Ignore Rule."
OR
You could right click on the word and choose to "Ignore Once."
OR
You could right click on the word, select Grammar, followed by "Options...", then "AutoCorrect options". Uncheck "Capitalize first letter of sentences." Just keep in mind that most of the time you will need to capitalize the first letter of sentences.

When Word changes the letter you should get a little symbol at the side of it (a bit like a lighning bolt). If you do, click on the drop down arrow ( which appears when you hover on it) and choose the option to stop changing the case automatically.
Otherwise you can go into, Tools, Options and turn it off that way.

MS-Word automatically corrects capitalization and minor spelling errors. It's possible to turn it off.

If you only want to undo this "auto correct" feature once in a while, you can do it on an individual basis. When it happens, click on Edit on the top toolbar and when the menu drops down click on "undo auto correct".
