I made an afghan that fit on a queen size bed and it took me eleven skeins of Red Heart 3-ply. I did fives rows of double stitch then a row of single to keep it tight.
I also made a 12inch pillow in all single stitch and i did with one skein of Red Heart 2ply baby yarn.
If you are making a baby blanket bigger then 24 inches, I suggest using more then one skein.
In my opinion, its always better to buy more and have extra and I never put too much weight on how much yarn the patterns say because everyone crochets/knits differently. I pull my stitches really tightly while my mother does it more losely, so that makes how much yarn we use differ a lot.
As for patterns, trying searching for Vana White (ya know, from Wheel of Fortune). She does a lot of patterns and books and I always found her patterns amazing. I'm pretty sure she does baby stuff, too.

The number of skeins needed varies with the size of the end product. Patterns come with a suggested skein or ball number. This number is specific to the yarn called for and to the pattern. Some patterns also give the lenth of the skein used in feet or yards. This is helpful if you are using a different yarn type or brand.

Good patterns include the yardage so you can easily substitute yarn. For example, this Knitty pattern http://knitty.com/ISSUEfall06/PATTlizardridge.html calls for 20 skeins of Noro Kureyon [100% wool; 109yd/100m per 50g skein]. Doing the math tells you that a 42 x 64 inch blanket requires 2,180 yards (2,000 meters) of yarn.

The ballband of any yarn will tell you how many yards are in each skein. Just divide that number into the required yardage to calculate how many skeins you'll need for the pattern. (It's important to remember that if you have to use two strands of yarn to get the correct gauge, you must double the required yardage.)

Besides Knitty.com, I like the patterns at:

It really depends on the pattern, but unless you're doing one for a doll, one skein isn't going to do it.
There are actually lots of good patterns that people have shared on the net. And even though you may not want to get spam, Lion Brand does share patterns every month if you're willing to take their e-mail. Otherwise, look for a Ben Franklin, Michaels or even Wal-Mart and Meijer sell pattern books. Anywhere you can buy yarn, you can usually find all kinds of patter books.

If the pattern says you need one skein, then that's all you need. Maybe it's a huge skein? I don't know without looking at the pattern. Here's my favorite 2 sites for patterns.

A repeat but more is better than not enough, especially if you are using yarn with a dye lot. My favorite site for patterns is here

You can find almost anything you want on that site. I always use it to find what I need. Good luck with your search!
