Personally, no, did not see that; however, you never know for sure who might a double in any film...could be Carrey as a "joke" was a double, although I highly doubt it.
Know that Mel Gibson, in his prime, did his own stunts, but in the last 15 years have never heard of an actor doing his own stunts, not just for self-service reason, but because whatever insurance company they were registered with did not allow it without nullifying the contract in general.
