with something that cannot go beyond finite processing?
So how come the believers have certain ideas formed about the creation and running of this infinite universe?
Stranger still, how come the non-believers who are supposedly rational thinkers and scientific people have certain ideas formed about the creation and running of this infinite universe, such as there is no almighty God, the creator and CEO of this universe?
How can each justify their basis for the ideas they have?

I am not looking for a definition of the "infinite" or the "finite". The point is it is not possible for the human brain to comprehend this universe. Then how come we have various theories related to who runs this universe and how was it created and so on.
it is possible for the human mind to comprehend who created me. We have the means and the theory and the proofs and the evidence of sperm fertilizing the egg and egg developing in to a human being. These things are finite.

Who says that the universe is infinite?
If anything were truly infinite, it could never be known as such (try calculating an infinite number, more on this in a second) and one would only/could only assume such an answer.
When you are traveling along an 'infinite' path, obviously you haven't been traveling that path since the beginning, so there is no way for you to know if the path truly is infinite or not (how do you know it doesn't end when you aren't looking?) And if every point of consciousness ceased to exist, how could the infinite be continually recorded with no consciousness to keep the record?
Infinite is a concept created by consciousness to ensure that there is 'enough' of whatever to satisfy whatever condition (think of God as saying "I really don't know how much space I'm going to need so I will say there is 'infinite' space, since that will give me plenty of room that I need.") Think of it as taking a full sheet of paper and using it to jot down just a small list of things you need from the store. Taking the 'extra' paper allows you to ensure that you will have enough room to list everything that you need, but that doesn't mean the paper goes on forever.
As for the clash of believers and non-believers, each side uses a statistical arguement in order to bolster whatever belief that they have. That means each side uses data and statistics (in whatever form) that correspond to the arguement that agrees with them, while dismissing any arguement that doesn't. There is no given that says that just because there is a God, it's exactly like the one described in the Bible, or that that God is the sum total person, and not simply a single perspective (one of 10 trillion.)
One person says its sunny outside, another says its dark and rainy. One person says its snowing, another that there's a drought going on. Not only can every person be right, every person can be 'right' at the exact same time (just not 'right' about the exact same place, although I am sure there are some places where it can be sunny in one spot and dark and rainy in another.) Justification doesn't take much evidence to be considered 'proof'.

Well first the universe is not infinite. Secondly, rational and scientific people use observations (mostly theoretical physics) to attempt to form ideas about the creation of the universe. Last, science makes no claim that there is no "almighty God."

When you think you deal with concepts. Not the actual thing. We create concepts about everything, its basic to human thinking.
This means no-one can know "the truth".
As humans we create certain ideas (often the most brilliant) and then define which is accurate by means of other ideas (rationality, faith, empiricism).
Everyone tries to justify their ideas by using one of these systems. Often very different systems.
You see life is actually a lot of rhetoric (and I mean that in a good way) of persuading others your idea and how you justify it is the correct means
However, some accept the relativity of truth and others insist on shoving their truths down others thoughts (on both sides of the fence).

The human mind is designed to end. Therefore it cannot grasp the meaning of infinite. Nothing in existence is infinite so we can have no idea. Perhaps humans are not of a high enough mental capacity to fully grasp the meaning.
