Mostly because baseball isn't a particularly popular game in Europe. Hockey is popular, particularly in Russia and northern European countries, and basketball has some following. There simply isn't much baseball played, so you don't get pro-quality players.
You do get a few Army brats who were born in odd countries, but pro players who actually grew up outside the Americas or the couple Asian countries where the game is played are very, very rare.

Most Europeans prefer Cricket over Baseball. Without interest, baseball parks to play, and organized leagues there will be very few or no players coming from that part of the world.

Baseball isn't widespread or deeply ingrained in Europe, and there hasn't been a massive influx of immigrants from there in decades -- but there are a tiny handful of 2007 players who were born in Europe.
Jeff Baker, Rockies, born in W. Germany
Edwin Jackson, Devil Rays, born in W. Germany
Will Ohman, Cubs, born in W. Germany
Okay, maybe these three were Army brats, born to American military families serving in West Germany at the time -- I neither know nor care -- but this last player surely was not:
Rick Vanden Hurk, Marlins, born in Netherlands (given name is Henricus)

Europeans play cricket, and we play baseball. Kind of like how we play football, and they play soccer, (or vice versa, depending where you are).

Baseball and American football are not popular there. Same as soccer here. Baseball has become largely Latin now.
