Absolutely. People are acting way more often than they know or would ever admit. Funny though how if you give a script to some guy who you know to be very good at acting different to his female peer, his parents, his boss, etc. How bad of an 'actor' he can be ;-P Many people can't apply the sam principals of those things that they do on a daily basis to that person on the page. Make that person come to life with what you do every day with one of those other people that you relate to or whatever... use what you know, know what I mean?

You are who you are when you're by yourself thinking your thoughts, writing in a journal, looking in a mirror. You are always who you are when in the presence of other people too, they just see different aspects of a multifaceted person like you are.

But yes, I do act a bit around people - even immediate family and close friends sometimes. I make that shift so as to be easier for the other person to communicate with or be more comfortable with me. Or I do it as a form of experimenting with different acting techniques that only I know I am doing and they are unaware of. But I don't ever not know how I really feel inside and who I am as a person. I always have a sense of self.

I think the real question isn't who are we, but can we truly know another person when we know that it is human to 'put on' for others. The only person who really knows a person is themself. Everything else is just a very educated guess.

Sure!
I think Shakespeare put it best in 'As you like it'
Jacques:
"All the world's a stage,
And all the men and women merely players.
They have their exits and their entrances,
And one man in his time plays many parts,
His acts being seven ages."

--From As You Like It (II, vii, 139-143)

It goes on from there - worth reading the whole thing!

Everyone has different roles. Social mores teach us how to behave and act in different social situations. You are who you see in the mirror in the morning. If you are confused get help.
